Overnight Oats

The first time I ate overnight oats I wan't a fan. But then it started to grow on me, similar to my journey with sushi. Have you tried it yet? I see it on all the "brunch" menus these days. Rather than the traditional granola/yogurt or hot oatmeal, overnight oats is a combination of the two. The real trick is learning how to customize it to your taste. 

Here's a pretty generic recipe to get you started. You can then add dried fruit, berries, coconut or nuts.  Happy breakfast!

Ingredients:
  • 1/2 cup of old fashioned rolled oats
  • 1/3 cup of Greek Yogurt
  • 2/3 cup of nonfat milk (or milk of your choice)
  • 1 tablespoon of chia seeds
  • 1/2 tablespoon of honey, plus a little more to drizzle on top in the morning
  • 1 teaspoon of vanilla extract
  • fresh blueberries, to your liking
Steps:

Combine all of the ingredients in a bowl and let sit in the fridge overnight. In the morning, stir in blueberries and drizzle with honey. Enjoy :)

The girls learned how to fill deer feeders at the ranch with Daddy. There was a steady stream of questions...

How does the deer eat the corn?
What other animals like corn?
Why does the fence have really sharp parts?
Why is the bag so heavy?
Can I climb the ladder?
When does the feeder go off?
What's the difference between the feeders?
What is protein?
Is protein like made of steaks?
Can I put my bacon next to the feeder for the deer?
Can baby deer reach the feeder?

We just got back from a great family trip to the ranch. It was our "redemption" trip since we all came down with the flu the last time we went over the holidays. We enjoyed some much needed family R&R.

Basketball

This first season of basketball has been a hoot. Basketball is a more complicated sport than I gave it credit for. I mean, try explaining it to a 3 or 5 year old! The League does a great job trying to bring it to a level that the littles can grasp. However, P is 3 and can't dribble or physically get the ball in the basket yet. But she has the biggest smile on her face throughout the whole thing.
