Trip to Texas: Fajitas

Ross and I just returned to Anchorage from a fabulous trip home to Houston. The sweltering heat (almost 100 deg F!) was quite a change from what we're used to, but when you get that sticky-icky feeling at all you actually kind of miss it. Weird, I know.

The first night in town, we had a mini parental reunion; the Huebel's came over to the Aldrich's for some fajitas. Ross and I definitely miss good 'ole Tex Mex in AK, so it's always on the request list when we come back for visits.

Mom bought pre-marinated chicken and flank steak at Central Market. The Lime flavor was excellent and the skirt steak was thicker than we'd ever seen. Delish!

Homemade guacamole, fresh tortillas, queso, and grilled veggies round out the meal.

Tomato & Cucumber Salad (4 servings)

1 tomato, thinly sliced or 1 1/2 C. cherry tomatoes, halved
1/2 C. Bermuda onion, thinly sliced
1/2 medium cucumber, peeled and thinly sliced
3 oz. feta cheese chunks

Dressing:
1/4 C olive oil
1/4 C white wine vinegar
1/2 tsp crumbled marjoram
1/2 tsp seasoned salt

Combine dressing ingredients and pour over vegetables. Let
stand 1 hour before serving



Asian Cole Slaw with Ginger-Peanut Dressing

4 C shredded cabbage
1-2 C shredded carrots
1 red bell pepper, thin slices
1 C edamame, shelled and cooked
2 scallions, finely sliced
1/2 C peanuts
1/2 C cilantro, rough chopped

Dressing:
1/4 C honey
1/4 C vegetable oil
14 C unseasoned rice vinegar
1 Tbsp soy sauce
1 tsp sesame oil
1 Tbsp peanut butter
1/2 tsp salt
1/2 tsp Sirracha sauce
1 Tbsp fresh ginger, minced
1 clove garlic, minced

Throughly mix dressing in small container. Combine vegetables in
large bowl. Pour dressing over and let stand 10 minutes before 
serving.  Add salt to taste.

(**Optional: add one pkg crushed Ramen noodles. Discard seasoning
packet.)
