A vegetarian meal?

I don't eat or prepare vegetarian meals very often, but after trying this dish (thanks Mom) I'm thinking it's not so bad. Mom made this Rachel Ray recipe for Roasted Mushrooms with a Chipotle Pumpkin Polenta a few nights ago. The mushrooms have a hearty, almost chewy texture that fool you into thinking you're eating steak- ok maybe that's a stretch, but you get the idea.
