We had a gender reveal lunch at our house last week, a mere hour after Tom and Emily went to the Doctor to find out the gender of their little baby bump.

It's a....



BOY!!!

Before the big reveal, it was pretty much a house divided; half were guessing girl and the other half boy. Turns out, Eddie is getting a little brother :)

The menu included, Blueberry French Toast Casserole (thanks for the recipe mom!), a salmon frittata, orange julius, and an assortment of cookies.

Salmon Frittata: Fresh salmon, tomatoes, potatoes, onion, cheese, cilantro, egg, milk.. mmm

It was GONE!

Orange Julius
6 ounces frozen orange juice concentrate
1 cup milk, lowfat okay
1 cup water
1/4 cup sugar
1 teaspoon vanilla
8 ice cubes


Directions:
1. Combine all ingredients, except ice cubes, in blender.
2. Blend 1-2 minutes , adding ice cubes one at a time, until smooth.


Blueberry French Toast Casserole
20 oz. loaf white bread, crusts cut off, bread cubed
8oz cream cheese (use light version), cubed
2 C frozen blueberries
12 eggs
2 C milk
2 tsp vanilla
1/3 C maple syrup

Spray grease 9X13 pan or glass dish
1/2 bread cubes, add cubes of cream cheese. Blueberries. Add rest of bread cubes.

Directions:
Whisk together, eggs, milk, vanilla, and syrup. Pour evenly over casserole.
Cover with foil and refrigerate overnight.
Bake 350 30 minutes
Uncover and bake 30 minutes more.

Drizzle on more maple syrup
Dust with powdered sugar
