We made this Asian Chicken Salad (an Ellie Krieger recipe) a couple nights ago.
It was quick, easy, AND healthy. You could really taste the fresh ginger in the dressing. Sliced almonds, mandarin oranges, chives, watercress, and cabbage. Mmmm. If you want to make the meal even FASTER then buy a store-bought asian dressing instead of making your own. Ross grilled chicken and we sliced it over the top.
